Dip Take a Mediterranean Spinach Dip Cheesy, creamy, savory—what other words could better describe the perfect dip? Now on top of that, add a generous amount of healthy, nutrient-dense veggies with a punch of aromatic herbs and tangy lemon. We present you with this unique spin on a classic spinach artichoke dip. Grab a chip (or a few) and dip right in. ½ cup swiig Freeze-Dried Spinach ¹⁄ ³ cup Water ¼ cup Onions, finely diced 3 cloves Garlic, minced ¼ cup Jarred Roasted Red Peppers, diced ½ cup Quartered Artichoke Hearts, diced (about ½ a can) 1 tbsp Olive Oil ½ cup Plain Non-Fat Greek Yogurt ¹⁄ ³ cup Light Mayonnaise ½ cup Reduced Fat Italian Cheese, Shredded ¼ cup Reduced Fat Feta Cheese 1 tsp Lemon Zest (about ½ a Lemon) 1½ tsps Dried Oregano ½ tsp Black Pepper, coarsely ground Salt to Taste 1. Add Freeze-Dried Spinach to a small bowl, pour Water on top, and stir until the spinach is covered with Water. Set aside. 2. Preheat your oven to 375 degrees. 3. Heat Olive Oil in a sauté pan over medium heat. Add Onions, and sauté for about 3-5 minutes, or until they start to become translucent. Add your re-hydrated Spinach to the pan, and stir. Cook for an additional minute, and then add your garlic. Cook for an additional 30 seconds, or until the Garlic becomes fragrant. Remove pan from heat, and set aside. 4. In a large mixing bowl, stir together your Greek Yogurt, Mayonnaise, and Lemon Zest. Once well-combined, add your Red Peppers, Artichokes, Spinach mixture, Feta Cheese, ¼ cup of the Italian Cheese, and Spices. 5. Spray an oven-safe baking dish with cooking spray to grease the pan, and then spread your dip evenly within. Top the dip with your remaining ¼ cup Italian Cheese. 6. Bake for about 15 minutes, or until cheese starts to melt and turn slightly brown. 7. Serve and enjoy! We recommend using Whole Wheat Pita Chips or Baby Carrots to dip. Did you try this recipe?
